Guess what happened tonight?
Well, I got really hungry towards the end of my desk shift and realized that my planned dinner of tilapia, roasted broccoli and baked sweet potato fries was impossible without a trip to the store because I was OUT of tilapia and broccoli. Oh the horror! I had been looking forward to this meal all day, so I made the trip to the store and picked up a frozen tilapia filet, FRESH brussel sprouts and a little surprise that I will show you all in tomorrow’s post. So ya better tune in, ya hear? :)
Anyways, I got back and went to the kitchen to prep everything…
I prefer fresh over frozen ANY DAY.
Turned the oven on broil… prepped the food…stuck it in there.. and decided to take goofy pictures because I was bored.
Once my little photo shoot was over, I opened the oven to stir everything around and flip the fish over. Well, I’m not sure how it happened so quickly, but the broiler definitely broiled my hand.
It got my other hand as well, but there’s no need to display my stupidity in two pictures. I think one is PLENTY. The good news is that dinner was fabulous!! :)
Terrible picture, but a very delicious meal.
It was just SO good. The sweet potato fries are just delicious. Holy cow. I tried a different kind than I’m used to making…

The spiciness balances out the sweet flavor perfectly, and they are packed with nutrients. One serving has ten percent of the vitamin c that you need daily, 12 percent of the fiber and 100 percent of the vitamin a. Delicious is nutritious! :)
The rest of the night has been spent doing a quick at home workout that consisted of some ab work, leg work and a 30 minute yoga dvd that I love, watching American Idol (I don’t even like it anymore, but it’s like a train wreck. You shouldn’t stare, but you can’t look away), working on some homework, and doing a little bit of blog maintenance that you will all see tomorrow!
Time to get ready for Revenge and then passing out. It’s going to be a long day tomorrow and a good nights’ sleep would be much appreciated.
