It’s the day that I’ve been waiting for ALL WEEK!!!!

 

SHRIMPFEST WEEKEND DAY 1!!!!!

I’m currently waiting for Hilliary to get here from Sedalia and as soon as she does, we’re going to grab Ash and hit the road!! :)

I was SO excited about all of the Shrimpfestivities (term coined by Megan) last night that I couldn’t fall asleep until 5:00 am.  Wanna know the best part?  I woke up at 8.  Hopefully I can catch some sleep in the car because I have a tendency to be slightly unbearable to be around when I haven’t slept.  Whoops!

Waking up early was not the best way to start the day, but breakfast definitely made up for it!  This morning I had another batch of overnight oats, made the same way as usual with the exception of putting a spoonful of PB2 on top.  I see that a lot of different bloggers do this and I assumed that since I LOVE peanut butter, it would be a great addition!  However, once I mixed it in I couldn’t even taste it.  Bummer.  :(  The oats were great though, and there was a slight hint of peanut butter, so I was a happy hippie. :)

After breakfast, I power cleaned my room/ dished/ bathroom because there is nothing worse than coming back from a weekend away to a room that is dirty and a list of chores that need to be done.  Once everything was spic n’ span, I hopped in the shower, got ready and packed my bag.  SOOO excited!

Oh, and ps:  I had told you that I bought a little surprise to tell you about yesterday, but since I didn’t post yesterday I left ya hanging.  Well, hang no longer!  I bought my very first rutabaga!! :)  What’s a rutabaga you ask?

Quite possible the ugliest vegetable in the world.

Upon seeing rutabagas at Walmart, my mind immediately went to this:

Mandrakes!

 

Yep.  I just referenced Harry Potter.  I’m a huge Harry Potter nerd, so judge away!!  Seriously, though, rutabagas are freakin’ ugly.  However, I had seen numerous recipes for baked rutabaga fries, which had been deemed delicious and MUCH healthier than fries from potatoes, so I figured I would give it a shot!  They actually turned out great!  The only complaint I had was just about how big of a pain they are to peel and cut up, but that could be because I used a butter knife.  I literally have more random dishware in my dorm room than anyone you could imagine.  Muffin tins, vegetable peelers, measuring spoons, spatulas, etc… but I don’t have a sharp knife.  Weird.  It’s on the list of the things to buy!  After peeling and chopping the rutabaga into fries, I threw them in a bowl, sprayed them with cookie spray and sprinkled garlic salt and season salt onto them.  I tossed them around a bit to coat them, spread them out on a cookie sheet, and baked them for about 30 minutes (flipping them halfway through).  Pretty darn good for being so healthy!

Next time I make them, I will probably leave them in a bit longer because they were a little on the crunchy side, but other than that I was very pleased!  I think it’s really important to never rule out a food that I haven’t tried before, even if it’s uglier than dirt.  I love being able to be surprised! :)

 

Alright, well Hil is here and that means that it’s just about time for the Shrimpfestivities to begin!!  HOLLA!
