Well hello!

This morning brought a few surprises in the Skinner house.  The first surprise being that I woke up at 7:30.  I literally wanted to throw up. That’s just too early for this girl.  The second surprise was that our planned girls breakfast at First Watch was cancelled because Jake woke up with the stomach flu.  I felt bad for him for all of about ten minutes, and then realized that Jake being “sick” is not like a normal person being sick.  He’s 12… and doesn’t like school all that much.  Enough said.  The third surprise was the greatest though.  I woke up hungry for pancakes.. so I was determined to make up for us missing our girls morning out and make the pancakes myself for everyone.

It was an interesting recipe because instead of just calling for buttermilk, you make the buttermilk yourself.  I took a sick kind of pleasure in watching the milk and vinegar mixture sour though.  I’m weird.  I know this.

Best pancakes in the world.

We decided to get creative with them, since First Watch has loads of creative pancake recipes.  For Jen’s pancakes, I put in pecans and sliced bananas.  They smelled heavenly.  Kayla had a mixture of chocolate chip pancakes and white chocolate chip pancakes and I had a chocolate chip pancake and then decided to get creative and put chocolate chips and shredded coconut into one.  Holy cow.  It tasted like a Samoa Girl Scout Cookie.

Fluffy Pancakes Recipe:

Ingredients

  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • cooking spray

Directions

  1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour”.
  2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

The rest of the day was spent literally doing nothing.  Waking up so early had me in a very sleepy mood, so after sitting by the fireplace for awhile and trying to warm up, I snuck upstairs into my little brothers room while he was at school and ended up falling asleep for about 3 and a half hours.  I know.  Ridiculous.  It was literally the BEST nap I have taken in forever though, so sorry I’m not sorry. :)

Dinner was great tonight.  We had fend for yourself because no one felt like cooking an actual meal, so I decided to make what I had been craving for like two days.

An omelet!!

This omelet consisted of turkey sausage, grilled onions and red peppers, spinach and egg whites with chipotle hot sauce on top.  It looks like a hodgepodge mess here, but it was literally delicious.  I enjoyed it alongside a delicious side of roasted cauliflower with sea salt and garlic that I shared with my sister. :)

After dinner, we hung out and watched a little bit of tv with the fam, and took a picture of Wil eating his Oreo’s.

He was seriously having listening problems tonight. This was supposed to be shower time. Yeah.. clearly not.

Now it’s time go make some popcorn and watch Revenge with my sissy!!  :)

Phone Detox

Phone Detox

Hi!! :)

 

Well I hope this finds everyone having a wonderful Wednesday.  I can honestly say that this day has been perfect.  I realized last night at about 8 o clock that I had left my phone in the car, but it turned into quite the blessing in disguise.  I decided to just wait until today to get it and the phone detox was amazing.  I love not being able to communicate with people sometimes.  Is that weird?

This morning I woke up around 9 with the sun shining in my windows and the breeze blowing in and it was amazing.  Oh my goodness.  Breakfast consisted of a bowl of cheerios with some almond breeze.  (yep.. I broke down and went to the store.  cheerios with cold water are not the same as rice krispies with cold water.  they get soggy)  It was delicious.  I love the creamy and sweet taste that the almond breeze gives the cheerios.  Mmmm :)

 

After breakfast, I ran down the the Salvation Army to look for some VHS tapes.  Yeah.. I’m a loser who still has a VCR, but I am completely ok with that.  I found four movies for 25 cents each which was a total steal!  I got:  Alex and Emma, Forces of Nature, Sleeping With the Enemy and Kiss the Girls.  All of them have big name actors and actresses, so I’m excited to get to watching them!  Once I got back, I decided to clean up a bit and get my dishes clean.  They were piling up quite fast and I hate having dirty dishes.  I also hate washing dirty dishes.  The feeling of a completely clean room was amazing though.

After cleaning up, I ran to the dining hall to grab some lunch.  Another famous dining hall salad.  I decided to throw some jalapenos in the mix today, and let me tell you; as delicious as it was, my nose was running literally the entire time I was eating.

Once I got back to my room, I was craving something sweet so I went for a Greek yogurt to finish it all off.  I don’t know if I have blogged about my obsession with mixin’s for plain Greek yogurt, but seriously.  It’s amazing.  I have bought a few boxes of sugar free pudding mix (cheesecake, chocolate and butterscotch) and I usually will put one packet of Splenda and one spoonful of pudding mix into the yogurt.  Oh my gosh.  The cheesecake is my favorite because it literally tastes just like cheesecake, but today I decided to go with the chocolate.  I was cravin’ some chocolate. :)

Heaven.

Well, now it’s time to get started on some homework and maybe go take a walk outside and enjoy this beautiful sunshine because I’m getting quite stir crazy inside.
