Well hello!
This morning brought a few surprises in the Skinner house. The first surprise being that I woke up at 7:30. I literally wanted to throw up. That’s just too early for this girl. The second surprise was that our planned girls breakfast at First Watch was cancelled because Jake woke up with the stomach flu. I felt bad for him for all of about ten minutes, and then realized that Jake being “sick” is not like a normal person being sick. He’s 12… and doesn’t like school all that much. Enough said. The third surprise was the greatest though. I woke up hungry for pancakes.. so I was determined to make up for us missing our girls morning out and make the pancakes myself for everyone.
They. Were. Amazing.
It was an interesting recipe because instead of just calling for buttermilk, you make the buttermilk yourself. I took a sick kind of pleasure in watching the milk and vinegar mixture sour though. I’m weird. I know this.
We decided to get creative with them, since First Watch has loads of creative pancake recipes. For Jen’s pancakes, I put in pecans and sliced bananas. They smelled heavenly. Kayla had a mixture of chocolate chip pancakes and white chocolate chip pancakes and I had a chocolate chip pancake and then decided to get creative and put chocolate chips and shredded coconut into one. Holy cow. It tasted like a Samoa Girl Scout Cookie.
Fluffy Pancakes Recipe:
Ingredients
- 3/4 cup milk
- 2 tablespoons white vinegar
- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted
- cooking spray
Directions
- Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour”.
- Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
- Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
The rest of the day was spent literally doing nothing. Waking up so early had me in a very sleepy mood, so after sitting by the fireplace for awhile and trying to warm up, I snuck upstairs into my little brothers room while he was at school and ended up falling asleep for about 3 and a half hours. I know. Ridiculous. It was literally the BEST nap I have taken in forever though, so sorry I’m not sorry. :)
Dinner was great tonight. We had fend for yourself because no one felt like cooking an actual meal, so I decided to make what I had been craving for like two days.
This omelet consisted of turkey sausage, grilled onions and red peppers, spinach and egg whites with chipotle hot sauce on top. It looks like a hodgepodge mess here, but it was literally delicious. I enjoyed it alongside a delicious side of roasted cauliflower with sea salt and garlic that I shared with my sister. :)
After dinner, we hung out and watched a little bit of tv with the fam, and took a picture of Wil eating his Oreo’s.

He was seriously having listening problems tonight. This was supposed to be shower time. Yeah.. clearly not.
Now it’s time go make some popcorn and watch Revenge with my sissy!! :)
