This is one of my favorite breakfast recipes because it is:

  1. Quick
  2. Full of protein and keeps me full and fueled
  3. Dorm room friendly


  • 3/4 cup egg beaters (I use these, but you can use real eggs as well)
  • A splash of almond milk to make the eggs more fluffy
  • Seasoning (I usually throw in a little chipotle hot sauce, but you could use Italian seasoning, salt and pepper, garlic salt, etc…)
  • Any kind of additional fixin’s that you want!  I usually tear up a piece of Oscar Meyer Carving Board Ham, but you could use anything!  Bacon, cheese, peppers, onions, mushrooms, etc…


  1. Pour/ crack eggs into the mug
  2. Mix in a splash of milk and whip together
  3. Add seasoning and mix in the fixin’s (cute rhyme, huh?) :)
  4. Cover and microwave *Cooking time will depend on your microwave.  I usually microwave for about 3 minutes.  Just pull it out randomly, stir up, and continue cooking until it’s done
