This is one of my favorite breakfast recipes because it is:
- Quick
- Full of protein and keeps me full and fueled
- Dorm room friendly
Ingredients:
- 3/4 cup egg beaters (I use these, but you can use real eggs as well)
- A splash of almond milk to make the eggs more fluffy
- Seasoning (I usually throw in a little chipotle hot sauce, but you could use Italian seasoning, salt and pepper, garlic salt, etc…)
- Any kind of additional fixin’s that you want! I usually tear up a piece of Oscar Meyer Carving Board Ham, but you could use anything! Bacon, cheese, peppers, onions, mushrooms, etc…
Directions:
- Pour/ crack eggs into the mug
- Mix in a splash of milk and whip together
- Add seasoning and mix in the fixin’s (cute rhyme, huh?) :)
- Cover and microwave *Cooking time will depend on your microwave. I usually microwave for about 3 minutes. Just pull it out randomly, stir up, and continue cooking until it’s done
